Tip of the Day: Cincinnati-style Chili

The other day we were watching that show with the chef who goes around the country stopping at diners and drive-ins to sample the local fare. You know, he’s the guy with the blonde, spiky tips and the goatee? Anyway, he was at this restaurant in Philly, or near Philly, or maybe rural Pennsyltucky, somewhere in the Northeast, well, America anyway, and he was eating this local version of chili and noodles. It looked delicious and reminded us of the very best way to put these two foods together: Cincinnati style! Long ago, a Greek immigrant came to the Queens City and started a restaurant called Skyline because it overlooked downtown and the Ohio River. His signature dish was a combination of spaghetti, spicy chili, beans, onions, shredded cheddar cheese, and oyster crackers. He had various combinations of these ingredients and gave names to those variations based on how many were included: a three-way was chili, spaghetti, and cheese; a four-way was the same with either onions or beans; and a five-way was the whole schmeer.
